ITACHO SUSHI

Working closely with the brand owners, Baenziger Coles developed the design concept of ‘Itacho Sushi’ and project managed its integration into the contemporary aesthetic of the exclusive, high end retail space at Sydney International Airport. ‘Itacho Sushi’ is an international brand highly regarded for its premium sushi and sashimi with reliance on only the finest and freshest ingredients. The design expresses the traditional language of Japanese culture which is enhanced with large scale graphic murals, low height Japanese stools and crafted detailing that evokes a strong sense of simplicity and serenity. Working with an international F&B company about to launch 2 local brands, 2 global brands and a new design concept into the Australian airport food and beverage arena was not only exciting, but led to two of the brands receiving finalist status in the 2011  FAB awards in Manchester.
